Unlike my other recipes, you may not be familiar with this one. What on earth is a Lockdowned Mango you may be asking? Well friends, it's a cocktail recipe I invited during lockdown of May 2020, remember those days when we thought COVID would be over by Christmas? LOL.
Anyway let me tell you a little lockdown story. I'd 'popped' home for the weekend to spend time with my parents before jetting off to Colombia for my 30th birthday in mid-March 2020. Despite covid become more prevalent in my deluded little head, V and I were still jetting off to spend my birthday on a beach in a tropical clime so I packed a little weekend bag to stay with my parents for a couple of days.
Then on Monday 20th March, Boris put everyone into lockdown (seemingly excluding himself but still.) So there I was stuck at my Dads house with the prospect of spending three whole weeks at his house, little were we to know it would last another 2 months. For anyone that knows me though knows how lucky I was during that first lockdown. I genuinely look back on it with fond memory, getting to spend so much time with my Dad, Stepmum and Stepsister. Firstly we were one of those ridiculous families that bought a hot tub so most weekends were spent in there. Secondly we decided to do a themed dinner every Saturday night to keep us entertained.
On one of the last weekends before I sneaked off back to London (to go on a date with my gorgeous boyf to be, Alec) it was my turn to organise the dinner. i decided what would be more fun than a Thai full moon party. I made summer rolls, prawn Pad Thai and mango sticky rice for dessert but the theme didn't stop there. I bought rave outfits, glow sticks and paint for everyone and even made little passports.
However, no Yorkshire Thai full moon party could be complete without a bucket cocktail. I wanted to make something tropical but punchy, although nothing illegal like the real full moon buckets. So this is my 'pour as I go' blended frozen cocktail, the core ingredients are the same that I made that night, although pre-warning the measures might be wrong but grab a few bottles, free pour and find out for yourselves!
Ingredients:
- Mango Sorbet (mine was from Co-Op)
- Any type of fizz (buy Prosecco from Laithwaites here)
- Vanilla Vodka (buy from The Bottle Club here)
- Passoa (also from The Bottle Club here)
- Bucket (from any local beach)
How to make:
- In a blender pour two shots of Passoa, one shot of vanilla vodka and a scoop of Mango sorbet.
- Blend together (if its sticking put a bit of water in there or more booze.)
- Pour into your bucket
- Add fizz to taste mixing in with a spoon
- Put on your rave clothes and enjoy
